Galangal: ginger's charming cousin
Galangal is an essential aromatic used in many South Asian dishes. You may be asking yourself...what is galangal?

It could be mistaken for ginger and it is in the ginger family but is not ginger. Galangal is like a smoother more charming cousin. It adds that zing that you can't quite put your finger on and we are featuring it in this week's Javanese Inspired Coconut Milk Chicken. When you taste your first bite, close your eyes and look for a zingy brightness... that is galangal!
